I don&#8217;t mind cooking, hell, I don&#8217;t even mind taking the time to prep a totally awesome meal. I just hate having to think up ideas for meals, because I suck at it. When I go to the grocery store, I&#8217;ll generally purchase several different types and cuts of meats, a bunch of sides (potatoes, rice, a few instant sides, the occasional bag of French fries, etc.), loads of veggies, and whatever our pantry/condiments rack/seasonings cabinet could use. But then I don&#8217;t know what to do with it all!</p>
<p>So lately I&#8217;ve been turning to the internet for suggestions and meat-specific or preparation-specific (slow cooker, for example) meals. The other night I was watching TV, and while I ignored the commercials about <a href="http://www.insurancequotesus.com/">insurance quotes</a>, I sort-of listened to ones about Pillsbury. And&#8230; I&#8217;m happy to report that <a href="http://www.pillsbury.com">Pillsbury</a> and their awesome <a href="http://www.pillsbury.com/recipes/ShowRecipe.aspx?rid=21339&#038;wtfs=1">bread bowl beef stew</a> was more than able to help me out. The meal was cheap, fun and easy to prepare, and the results were superbly delicious!</p>

But occasionally I&#8217;ll stumble across a low fat recipe that is worth sharing, and About.com&#8217;s <a href="http://lowfatcooking.about.com/od/bakedgoods/r/chocchipcookies.htm">low fat chocolate chip cookies</a> is definitely worth writing home about! The ingredients are as follows:</p>
<ul>
<li>1/4 cup butter, softened</li>
<li>1/2 cup sugar</li>
<li>1/4 cup brown sugar</li>
<li>1 egg white</li>
<li>1 tsp vanilla extract</li>
<li>1 cup all-purpose flour</li>
<li>1/2 tsp baking soda</li>
<li>1/4 tsp salt</li>
<li>1/4 cup cocoa powder</li>
<li>1/3 cup miniature chocolate chips</li>
</ul>
<p>However, I make a few changes. First, I use Kelly&#8217;s low-fat butter instead of regular butter. I also replace 1/2 cup sugar with 1/4 cup sugar &#038; 1/4 cup of instant French vanilla pudding mix. Finally, I use both milk chocolate and semi-sweet chocolate chips.</p>
<p>Hands down, the resulting cookies are <strong>amazing</strong>, so now when there&#8217;s a desire or need for chocolate chip cookies, this is the recipe that I use!</p>

			<content:encoded><![CDATA[<p>Last week I hit up the internet in search for a shortbread cookie recipe that did not require a lot of ingredients or prep time, but would also taste good and remain moist after baking and cooling. My prayers were answered with <a href="http://www.grouprecipes.com/12612/moms-christmas-shortbread.html">Mom&#8217;s Christmas Shortbread Recipe</a>. The ingredients and prep couldn&#8217;t get any easier! Two sticks of softened butter, one egg yolk, one teaspoon of vanilla extract, 1/2 cup of icing/powered sugar and 2 cups of flour; combine wet ingredients, then sift in dry ones, mix together, bake at 325 for 10-15 minutes.</p>
<p>And&#8230; enjoy the beautiful, fragrant, moist, melt-in-your-mouth crumbly cookies!</p>
