I’m normally pretty wary of “low fat” recipes, because nine times out of ten, the resulting product is bland and tasteless. But occasionally I’ll stumble across a low fat recipe that is worth sharing, and About.com’s low fat chocolate chip cookies is definitely worth writing home about! The ingredients are as follows:
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 egg white
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup cocoa powder
- 1/3 cup miniature chocolate chips
However, I make a few changes. First, I use Kelly’s low-fat butter instead of regular butter. I also replace 1/2 cup sugar with 1/4 cup sugar & 1/4 cup of instant French vanilla pudding mix. Finally, I use both milk chocolate and semi-sweet chocolate chips.
Hands down, the resulting cookies are amazing, so now when there’s a desire or need for chocolate chip cookies, this is the recipe that I use!
