Last week I hit up the internet in search for a shortbread cookie recipe that did not require a lot of ingredients or prep time, but would also taste good and remain moist after baking and cooling. My prayers were answered with Mom’s Christmas Shortbread Recipe. The ingredients and prep couldn’t get any easier! Two sticks of softened butter, one egg yolk, one teaspoon of vanilla extract, 1/2 cup of icing/powered sugar and 2 cups of flour; combine wet ingredients, then sift in dry ones, mix together, bake at 325 for 10-15 minutes.
And… enjoy the beautiful, fragrant, moist, melt-in-your-mouth crumbly cookies!
These have been a HUGE hit with family and friends, and I will definitely be making them again!
